Last Sunday, we went to Los Cuervos Flauteria. It's a new restaurant in Kyle.
The word "Cuervo" is spanish for black bird like Raven or Crow..FYI.
The owner chatted me up while making my flauta, which is a fried tortilla wrapped around meat..in this case it was flank steak. It was interesting... he discovered this flauta while visitng Mexico (through El Paso I believe). He liked it so much that he decided to create a restaurant around it.
Now.. as of 7/26/12 there is ONE item on the menu. This Flauta. You buy them in multiples (4+) and they come with these two salsas, which are VERY flavorful and not spicy. He also has a spicy sauce you can add, that is AWESOME.
We got ours "to-go" so he made me this one in order to show me the proper way to "dress" the flautas.

I will be checking that out! While Kyle doesn't need any more Mexican restaurants, it does need some variety. Thanks for the heads up!
